Make an interpreter of an esolang in shellscript?

(Not a compiler that translates into C code, but an interpreter)

(awk and sed can be used)

For example, this is a brainfuck interpreter implemented in bash.
Seeing that you should write portable shell scripts in order to ease maintenance, I thought as if interpreters/compilers for esolangs also had to be written in such scripts so that they would run in any POSIX-compliant environments.

I'm not sure of who told you this, but it's not only wrong, it's so wrong it's funny. Attempting to do any serious programming in bash will just lead to unreadable code and tons of weird hacks to get the thing barely working.
